Summer Barbecue Shrimp Salad with BBQ Ranch Dressing

What You Need:

For the Shrimp:

  • 1 lb large shrimp (size 16-20), peeled and deveined

  • 1 tbsp olive oil

  • Salt and pepper, to taste

For the Salad:

  • 4 cups mixed greens (arugula, spinach, and baby kale work well)

  • 1 cup cherry tomatoes, halved

  • 1 cup roasted corn (fresh or frozen)

  • 1/2 cup black beans, drained and rinsed

  • 1/2 cup crispy fried onions (store-bought or homemade)

For the BBQ Ranch Dressing:

  • 1/2 cup ranch dressing (store-bought or homemade)

  • 2 tbsp Just Savor Kansas City Sweet BBQ Sauce

  • 1 tbsp apple cider vinegar

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • Salt and pepper, to taste


What To Do:

  1. Prepare the Shrimp:

    • Preheat your grill or a grill pan over medium-high heat.

    • Toss the shrimp in olive oil, salt, pepper, and 2 tablespoons of Just Savor Bold & Tangy BBQ Sauce until well coated.

    • Grill the shrimp (size 16-20) for 2-3 minutes per side, or until they are pink and cooked through. Remove from heat and set aside.

  2. Roast the Corn:

    • If using fresh corn, roast it on the grill for about 5-7 minutes, turning occasionally until charred. Alternatively, roast frozen corn in a pan with a little oil until golden and tender. Set aside to cool slightly.

  3. Prepare the BBQ Ranch Dressing:

    • In a small bowl, whisk together the ranch dressing, Just Savor Kansas City Sweet BBQ Sauce, apple cider vinegar, garlic powder, onion powder, salt, and pepper until smooth and well combined.

  4. Assemble the Salad:

    • In a large salad bowl, combine the mixed greens, cherry tomatoes, roasted corn, and black beans.

    • Toss the salad with the BBQ ranch dressing until evenly coated.

  5. Top the Salad:

    • Arrange the grilled shrimp on top of the salad.

    • Sprinkle with crispy onions for a crunchy texture and extra flavor.

  6. Serve and Enjoy:

    • Serve immediately for the best freshness, or refrigerate the salad and dressing separately if preparing ahead of time.
